I love the idea, and a collection of ATK recipes for plant-based meat dishes is a welcome addition. We greatly enjoy the Impossible and Beyond product lines. I also appreciate the technique part. But, there is more to plant-based meats than Impossible ground burger. The majority of recipes relies on that as the plant-based meat. I would have liked to see a little bit more variety, recipes that go beyond "how can we use Impossible ground burger"? More with seitan, for instance, would have been useful.
